The Mindful Kitchen: Leading with Calm, Not Chaos

 




Think about the last time the ticket printer went crazy and three tables sent food back. What actually helped? Was it a chef screaming at the top of their lungs, or a chef who stayed completely cool and told everyone exactly what to do next?


Shouting isn't strength. It's just panic out loud.

When a leader loses their temper, the whole line feels it. Cooks get nervous, hands start shaking, mistakes get hidden, and the entire service goes downhill. Fear doesn't make people work faster—it just makes them afraid to mess up.


Here is how staying calm changes the kitchen:

1. You set the mood for the whole room

The pass is the heart of the kitchen. If you stay steady when everything goes wrong, your team takes a deep breath and realizes, "Okay, we've got this." You become the person who absorbs the stress instead of spreading it.


2. Take a one-second pause

When a steak comes out overcooked or a ticket gets dropped, don't explode immediately. Pause for one second to shift from anger to a solution.

Instead of: "Who burned this steak?! Pay attention!"

Try: "Fire another ribeye on two, eight minutes. We'll check the grill temp after service."


3. Make it easy for people to be honest

If your team knows you won't lose your mind over a mistake, they will tell you the moment something goes wrong. That means you catch errors early, save food, and keep orders moving out fast.


Great leadership isn't about being the loudest person in the kitchen. It's about being the steady anchor everyone turns to when things get tough. When you stay calm all the way to the last ticket of the night, your team respects you—and they actually enjoy cooking with you.
